Bright orange Cordyceps militaris, cultivated on grain and entirely insect-free. Mild, savoury-sweet and slightly nutty, it's lovely steeped as a tea or simmered in soups and broths.

Grown at Clayton Bay, dried and packed in 100 g bags.

In the kitchen
Steep a small pinch (about 1 g) in hot water for 10 minutes as a tea, or drop a few strands into soups, congee and broths in the last 15 minutes of cooking.
Storage
Airtight, cool, dark and dry. Keeps for at least 12 months.
