Flavour & textureWoody and savoury. Fried crisp, it's almost like bacon

Storing fresh mushrooms

How should I store them?

In a paper bag in the fridge, never sealed in plastic. Most of our gourmet mushrooms are at their best within 3–5 days. Pink oysters are best within 2–3.

Do I need to wash them?

No. They're grown on clean, sterilised substrate. Brush off any bits and trim the base.

Can I freeze them?

Cook them first, then freeze. Raw mushrooms go soggy when thawed.
