'Hen of the woods': a ruffled, layered cluster that's rich, earthy and a little peppery. Roast it hot and the frilly edges go crisp and golden.

In the kitchen
Pull into palm-sized clusters, toss with oil and salt, and roast at 220°C until the edges char (about 20 minutes). Brilliant in tempura too.

Paper bag in the fridge. Best within 5 days.
