Banded like a turkey's fan, turkey tail is one of the most widespread fungi on earth. It's too tough to eat whole, so it's traditionally simmered into a mild, earthy tea or added to stock.

Grown at Clayton Bay, then gently dried and packed in 100 g bags.

In the kitchen
Simmer a small handful (about 5 g) in 1 litre of water for 1–2 hours. Strain and sip, or use the liquid as a base for soups and broths.
You can re-simmer the same pieces a second time.
Storage
Airtight, cool, dark and dry. Keeps for at least 12 months.
