Weight

The lacquered red 'lingzhi', part of Chinese herbal tradition for more than 2,000 years. Woody and bitter, so it's one for the teapot, not the frying pan.

Grown at Clayton Bay, sliced, dried and packed in 100 g bags.

Reishi may interact with blood-thinning and blood-pressure medication. If you're on medication, pregnant or breastfeeding, check with your GP first.

In the kitchen
Simmer 3–5 thin slices in 1 litre of water for 1–2 hours. Soften the bitterness with ginger, cinnamon, honey or a spoon of cacao.
Storage
Airtight, cool, dark and dry. Keeps for at least 12 months.
